Blistered Shishito Peppers with Creamy Kimchi Sauce and Lemon Zest

Ingredients

Instructions

  1. In a food processor, add kimchi, coconut milk, brown sugar, chili garlic sauce, lemon juice and blend to combine.
  2. In a medium sauce pan over medium heat, add kimchi mixture. Cook to heat and slightly thicken, 3-4 minutes.
  3. On a grill pan brushed with olive oil over medium-high heat, char shishito peppers 3-4 minutes per side, until peppers have slightly softened.
  4. Remove skewers from the grill pan, top with lemon zest and serve with kimchi sauce. Enjoy!
