Broccolini and Sun-dried Tomato Pasta

- Bring a large pot of water to boil. Season with salt thoroughly and add in pasta. Cook until al dente, about 6-7 minutes. Remove from heat and drain.
- In a large skillet, heat olive oil over medium. Sauté shallot and broccolini until crisp tender, about 5 minutes. Remove broccolini to plate.
- In the same skillet, melt butter over medium heat. Whisk in flour and cook 2 minutes. Reduce heat to medium-low and stir in milk. Simmer until thickened to coat the back of a spoon, about 5-6 minutes, stirring throughout. Over low heat, whisk in cheese, salt, pepper, lemon juice. Add pasta and broccolini to pasta. Toss to combine. Taste for seasonings.
- Serve with extra parmesan and enjoy!
