Broccolini and Sun-dried Tomato Pasta

Instructions

  1. Bring a large pot of water to boil. Season with salt thoroughly and add in pasta. Cook until al dente, about 6-7 minutes. Remove from heat and drain.
  2. In a large skillet, heat olive oil over medium. Sauté shallot and broccolini until crisp tender, about 5 minutes. Remove broccolini to plate.
  3. In the same skillet, melt butter over medium heat. Whisk in flour and cook 2 minutes. Reduce heat to medium-low and stir in milk. Simmer until thickened to coat the back of a spoon, about 5-6 minutes, stirring throughout. Over low heat, whisk in cheese, salt, pepper, lemon juice. Add pasta and broccolini to pasta. Toss to combine. Taste for seasonings.
  4. Serve with extra parmesan and enjoy!
