Cliff House Strawberry Clover Club

A new gin bar, Juniper, opened recently in our neighborhood, which has prompted and inspired me to drink more gin. A traditional Clover Club has raspberries, but I believe many berries can be substituted, such as strawberries. My little Cliff House twist.

  1. In a cocktail shaker or a bowl, muddle the strawberries. Strain the strawberries through a fine mesh strainer and return to the shaker.
  2. To the shaker with strawberry juice add egg white, lemon juice, simple syrup and gin. Put lid on shaker and shake it vigorously, at least 1 minute. The reason for the intense shaking is to get the egg white to become the gorgeous frothy texture.
  3. Pour in chilled martini glass, top with dried strawberries, if using, and drink up!
