  1. To a bowl add, parsley, feta, shallot, pepperocini peppers and loosely mix with a fork. Stir in olive oil, vinegar and pepperoncini brine. Taste and season with salt and pepper, as needed.
  2. To serve, drizzle more olive oil on the top and serve with crackers of choice. Enjoy!
