Picnic Salami Sandwiches with Creamy Tomato Spread

I call these a picnic sandwiches because they are packable and perfect to impress on a picnic or to take for a hike. The Creamy Tomato Spread is my take on a Central Market classic dip, Love Dip.

Picnic Salami Sandwiches with Creamy Tomato Spread

Ingredients

For the sandwiches

• 1 loaf ciabatta baguette or baguette of choice
• 2 cups arugula
• 12oz package of peppered salami
• 1 recipe love dip (see below)

For the Creamy Tomato Spread (aka Love Dip)

• 8oz cream cheese, softened
• 2 teaspoons tomato paste
• 2 tablespoons plain greek yogurt
• 1 clove garlic, minced
• 1/2 teaspoon onion powder
• 1 tablespoon fresh parsley, chopped
• 1 tablespoon fresh basil, chopped
• 1 tablespoon fresh cilantro, chopped
• 1 tablespoon fresh tarragon, chopped
• 1/2 teaspoon dried oregano
• 1 teaspoon salt
• 1/2 teaspoon ground black pepper
• 1/2 teaspoon red cayenne pepper

Instructions

For the sandwiches

1. Split the baguette in half. Spread thick layer of love dip on one side, top with salami, then arugula. Add top of loaf and slice into halves or quarters. Enjoy!

For the Creamy Tomato Spread (aka Love Dip)

1. Combine all ingredients in a bowl. Stir vigorously to meld together. Chill at least 1 hour in fridge. Top with herbs and a cherry tomato and serve with favorite cracker and/or fresh veggies.
