Roasted Tomato Soup with Dill and Crème Fraîche
This is basically homemade Campbell’s with a little lipstick on. The crème fraîche gives a subtle nutty flavor and the dill brightens the whole thing up.

- Heat oven to 400.
- On a sheet pan, toss tomatoes, garlic and onion with olive oil. Cook in pre-heated oven for 15-20 minutes. Remove from oven.
- In a large pot over medium heat, add tomatoes, onions, garlic and tomato paste and stir to combine. Mix in vegetable broth and diced tomatoes.
- With a hand immersion blender, tomato broth mixture until smooth. Check for seasonings and add salt and pepper to taste.
- Serve with a dollop of créme fraîche, fresh dill, a drizzle of olive oil and cracked black pepper. Enjoy!
